Yaycon butty

A perfect breakfast, brunch or lunch meal that you can so easily recreate at home, using the stuff you have lying in your fridge or kitchen counter



Ingredients:

  • 2 slices of bread

  • 4 Yaycon rashers

  • iceberg lettuce or use any greeny leaves of your choice (rocket, spinach, chard, etc.)

  • 3-4 slices of tomato

  • few sliced gherkins

  • 1 tbsp pesto (I usually go with wild garlic)

  • drizzle of garlic mayo

  • also drizzle of ketchup and optionally a few drops of hot sauce (like sriracha, tabasco) or brown sauce

Method:

  1. Start from preparing all of the condiments and ingredients you are planning to use so they are by hand ready to use right away.

  2. Place a frying pan on a medium-high heat (no need to add oil).

  3. When hot add 4 Yaycon rashers and turn the heat down to medium-low. Keep an eye on it and, after more or less 2 minutes, flip over.

  4. Put 2 slices of bread in a toaster.

  5. Assemble all when ready - squeeze some ketchup and sriracha (or whatever other sauce of your choice) on the top side of bread. Pesto and garlic mayo drizzled on the bottom followed by tomato, gherkins and lettuce.

Now, it is just Yaycon that needs to go inside of your toasted sandwich and voilà!
